🥬 Crispy Cabbage and Egg Fritters

Ingredients:

  • 2 cups shredded cabbage
  • 3 large eggs
  • 1/2 cup all-purpose flour (or chickpea flour for gluten-free)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt, 1/4 tsp black pepper
  • 1/4 tsp paprika (optional for extra flavor)
  • 2–3 tbsp olive oil for frying
  • Fresh herbs for garnish (parsley or chives)

Instructions:

  1. Prepare the mixture: In a large bowl, combine shredded cabbage, eggs, flour, Parmesan, onion, garlic, salt, pepper, and paprika. Mix until well combined.
  2. Heat the pan: In a large skillet, heat olive oil over medium heat.
  3. Form fritters: Scoop 2–3 tablespoons of the cabbage mixture per fritter and flatten slightly in the skillet.
  4. Cook until golden: Fry for 3–4 minutes per side, or until fritters are golden brown and crispy. Remove and drain on paper towels.
  5. Serve: Garnish with fresh herbs and serve warm with your favorite dipping sauce, like sour cream or spicy mayo.

Pro Tip: For extra crunch, squeeze out excess water from the cabbage before mixing to make your fritters extra crispy!
