Stuffed Pepper Soup

Ingredients:

  • 1 lb (450 g) ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers (red, green, or yellow), chopped
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • 1 cup cooked rice (white or brown)
  • Optional garnish: shredded cheese or fresh parsley

Instructions:

  1. In a large pot or Dutch oven, cook ground beef (or turkey) over medium heat until browned. Drain excess fat if needed.
  2. Add diced onion and garlic, cooking until fragrant and softened (about 3 minutes).
  3. Stir in chopped bell peppers and cook for another 2–3 minutes.
  4. Add diced tomatoes, tomato sauce, broth, oregano, basil, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat and let simmer for 20–25 minutes, allowing the flavors to blend.
  6. Stir in cooked rice and let warm through for 5 minutes.
  7. Taste and adjust seasoning as needed.
  8. Ladle into bowls and garnish with shredded cheese or parsley if desired.
