If you love cheese, this one’s for you! Mozzarella cheese slices are creamy, mild, and melt-in-your-mouth delicious. Perfect for layering on sandwiches, melting over burgers, adding to casseroles, or enjoying as a simple snack with crackers.
Ingredients
- 4 cups whole milk (preferably not ultra-pasteurized)
- 1 tsp citric acid dissolved in ¼ cup water
- ¼ rennet tablet dissolved in ¼ cup water
- 1 tsp salt (or to taste)
Instructions
- Heat the milk – Pour milk into a large pot and stir in the dissolved citric acid. Slowly heat to about 90°F (32°C) while stirring gently.
- Add rennet – Remove from heat, stir in dissolved rennet, then let it sit undisturbed for 5 minutes until it forms a custard-like curd.
- Cut the curds – With a long knife, cut the curds into even cubes. Slowly heat to 105°F (40°C) while gently stirring.
- Drain whey – Scoop curds into a colander lined with cheesecloth and drain off excess whey.
- Stretch & knead – Microwave curds in short bursts (or use hot water) until they reach about 135°F (57°C). Knead and stretch until smooth and elastic.
- Shape into slices – Roll out the mozzarella into a flat sheet, slice evenly, and refrigerate.
- Serve & enjoy – Use your mozzarella slices for burgers, sandwiches, or simply enjoy them fresh!
