John Wayne Casserole – A Hearty Tex-Mex Classic!

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 medium onion, chopped
  • 1 cup bell peppers, diced (red or green)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 can (4 oz) diced green chilies
  • 2 cups refrigerated biscuit dough or crescent roll dough

Instructions:

  1. Preheat oven: Set oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook beef mixture: In a skillet, cook ground beef and onion until beef is browned. Drain fat, then stir in taco seasoning, bell peppers, and tomatoes with green chilies. Simmer for 5 minutes.
  3. Prepare base: Press biscuit or crescent roll dough into the bottom of the baking dish to form a crust. Bake for 8 minutes until slightly golden.
  4. Mix creamy layer: In a bowl, combine sour cream, mayonnaise, and half of the shredded cheeses. Stir in diced green chilies.
  5. Assemble casserole: Layer cooked beef mixture over the crust, spread creamy cheese mixture on top, then sprinkle with remaining cheeses.
  6. Bake: Return to oven and bake uncovered for 25–30 minutes, until bubbly and golden brown on top.
  7. Serve: Let rest for 10 minutes before slicing. Serve warm with fresh salsa or guacamole.
