Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup buttermilk (plus 1–2 tbsp more if needed)
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (washed and dried)
  • Optional: coarse sugar for topping

Instructions

  1. Preheat Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. Cut in the Butter
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to blend until the mixture resembles coarse crumbs.
  4. Add Wet Ingredients
Pour in the buttermilk and vanilla extract. Stir just until combined. The dough should be slightly sticky—don’t overmix.
  5. Fold in Blueberries
Gently fold in the blueberries, being careful not to crush them.
  6. Shape the Dough
Turn the dough onto a lightly floured surface. Pat into a 1-inch thick rectangle. Cut into rounds or squares using a biscuit cutter or knife.
  7. Bake
Place biscuits on the prepared baking sheet. Sprinkle tops with coarse sugar if desired. Bake for 15–18 minutes or until golden brown.
  8. Cool & Serve
Let biscuits cool slightly on a wire rack. Serve warm with butter, honey, or a drizzle of lemon glaze.
