A hearty, flavor-packed twist on the classic meatloaf — loaded with Italian herbs, gooey mozzarella, and finished with marinara sauce. Comfort food doesn’t get more delizioso!
Ingredients:
- 1 ½ lbs ground beef (or a mix of beef & pork)
- 1 cup Italian breadcrumbs
- ½ cup grated Parmesan cheese
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs, lightly beaten
- ½ cup milk
- 1 Tbsp Italian seasoning
- 2 Tbsp fresh parsley, chopped
- 1 tsp salt & ½ tsp black pepper
- 1 cup shredded mozzarella cheese (for filling)
- 1 cup marinara sauce (plus extra for serving)
Instructions:
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease.
- In a large bowl, combine ground meat, breadcrumbs, Parmesan, onion, garlic, eggs, milk, parsley, Italian seasoning, salt, and pepper. Mix until just combined (don’t overmix).
- On a sheet of parchment, flatten the meat mixture into a rectangle. Sprinkle mozzarella in the center. Roll it up carefully into a loaf, sealing edges.
- Place into loaf pan, seam side down. Spread marinara sauce evenly over the top.
- Bake 55–65 minutes, or until cooked through (internal temp 160°F / 71°C).
- Let rest 10 minutes before slicing. Serve with extra warm marinara.
