Beef & Barley Soup is the ultimate comfort food – warm, hearty, and packed with flavor. With tender beef, wholesome vegetables, and nutty barley simmered in a rich broth, this recipe is a satisfying bowl of goodness perfect for chilly days.

Ingredients:

  • 1 lb beef stew meat, cut into small cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup pearl barley
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides. Remove and set aside.
  2. In the same pot, sauté onion, carrots, celery, and garlic until softened.
  3. Add beef back to the pot, then stir in broth, barley, bay leaves, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 1–1.5 hours, stirring occasionally, until beef is tender and barley is cooked.
  5. Remove bay leaves before serving. Garnish with fresh parsley.
