Ingredients:
- 1 lb beef stew meat, cut into small cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 8 cups beef broth
- 1 cup pearl barley
- 2 bay leaves
- 1 tsp dried thyme
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add beef and brown on all sides. Remove and set aside.
- In the same pot, sauté onion, carrots, celery, and garlic until softened.
- Add beef back to the pot, then stir in broth, barley, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 1–1.5 hours, stirring occasionally, until beef is tender and barley is cooked.
- Remove bay leaves before serving. Garnish with fresh parsley.
