Ingredients

  • 12 fresh jalapeños, halved and seeds removed
  • 1 lb large shrimp, peeled, deveined, and chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (or pepper jack for extra heat)
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • ¼ cup chopped green onions
  • Salt & black pepper, to taste

Instructions

  1. Prep the jalapeños – Slice each jalapeño in half lengthwise and scoop out the seeds and membranes (wear gloves to avoid the spicy burn!).
