Ingredients:
- 4 medium firm green tomatoes
- 1 cup all-purpose flour
- 1 cup cornmeal (or breadcrumbs for extra crunch)
- 2 large eggs
- ½ cup buttermilk (or regular milk)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for a smoky kick)
- ½ teaspoon garlic powder (optional)
- Vegetable oil, for frying
Instructions:
- Slice the green tomatoes into ½-inch thick rounds. Pat dry with a paper towel to remove excess moisture.
- Set up three shallow bowls:
- Bowl 1: flour mixed with salt, pepper, and seasonings.
- Bowl 2: whisked eggs and buttermilk.
- Bowl 3: cornmeal (or breadcrumbs).
- Dredge each tomato slice in flour, dip into egg mixture, then coat in cornmeal. Press gently to help the coating stick.
- Heat about ½ inch of vegetable oil in a skillet over medium-high heat. When hot, carefully place tomato slices in the pan (don’t overcrowd).
- Fry for 2–3 minutes per side, until golden brown and crispy.
- Remove and place on a paper towel–lined plate to drain excess oil.
- Serve hot with ranch, remoulade, or spicy aioli dipping sauce.
