Mini Meatloaf Muffins

Looking for a fun twist on a classic dinner favorite? These Mini Meatloaf Muffins are hearty, flavorful, and perfectly portioned for families. Each bite is packed with savory beef, aromatic seasonings, and a tangy glaze—ideal for weeknight dinners, meal prep, or lunchboxes

Ingredients:

  • 1 ½ lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup (for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian herbs (optional)

Instructions:

  1. Preheat Oven – Heat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. Mix the Meatloaf – In a large bowl, combine ground beef, breadcrumbs, milk, Parmesan, onion, egg, garlic, salt, pepper, Worcestershire sauce, and herbs. Mix until evenly combined.
  3. Form Mini Meatloaves – Divide mixture evenly among muffin cups, pressing lightly to shape.
  4. Add Topping – Spoon a small amount of ketchup over each muffin.
  5. Bake – Bake for 20–25 minutes, or until meat is fully cooked (internal temperature 160°F / 71°C).
  6. Serve & Enjoy – Let cool for a few minutes, then remove from tin. Serve with mashed potatoes, vegetables, or a dipping sauce of your choice.
