Ingredients
- 1 pound ground beef (or ground turkey)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 bell peppers (any color), chopped
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups cooked rice (white or brown)
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese (optional, for extra flavor)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven: Set your oven to 375°F (190°C).
- Cook the beef: In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
- Add vegetables: Stir in onion, bell peppers, and garlic. Cook for 5–7 minutes, or until softened.
- Add tomatoes and sauce: Mix in the diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
- Combine with rice: Stir in the cooked rice until everything is well combined. Taste and adjust seasoning.
- Assemble casserole: Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly. Sprinkle mozzarella (and cheddar, if using) on top.
- Bake: Place in the oven and bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
